The story goes that in 1972, in a restaurant called The Hungry Monk two men pretty much invented a new pudding that they called (originally) banoffi pie. Over the years we’ve come to know it as banoffee pie. In fact, we use the term “banoffee” as meaning anything with banana and toffee in it. Their new dessert proved a great success, so much so that patrons would only book a table if the pie was on the menu!

Since it’s first inception banoffee pie has been played with and enhanced. This recipe for example has been taken from the original idea and changed around a bit to produce a smaller, but (I think) equally as tasty treat. A large slice of banoffee pie can be a little filling so this is probably a happy medium – a banoffee cupcake.

What you’ll need:

2 bananas (1 over ripe), 1 large egg, 50g chewy toffee, 60g butter, 115g self-raising flour, 70g brown sugar, 180ml double cream, 4 tablespoons of Dulce de Leche or chocolate sprinkles to decorate.

1. Turn the oven to 180C. While the over heats take the over-ripe banana and mash into a paste.

2. Put the butter into a bowl (it will be easier if it’s soft, so leave it out for a few hours or microwave for 20 seconds). Pour in the sugar and whisk up nicely.

3. Add the banana mash and crack the egg into the mixture. Chop the toffee into small lumps and mix it up really well.

4. Now add the flour, removing all lumps. Fold it in and again mix well.

5. Grease proof a muffin tray. Put a dollop of the mixture into each hollow and place the tray into the oven. After 15 or 20 minutes they should be baked, but keeping checking as smaller cakes will burn. You can test if the cupcakes are ready by pushing a fork into the centre of one and if it comes out clean you know they are done.

6. Now if you are naughty you might want to eat some of the unused toffee…

7. Once baked remove from the tins and place on a wire rack to cool. While the cupcakes are cooling whip the double cream until stiff, then add to the cakes for decoration.

8. With the cream on place feel free to stick anything you like in it – the second banana, some rolls of chocolate, some Dulce de Leche – you might even want to stick in a few Smarties!
