I’m going to describe how you can make the batter that Mexicans use to cook the shrimp when following their beloved Baja shrimp taco recipes. This batter can be used to take just about any type of shrimp tacos from a “7″ or an “8″ to a “9″ or a “10″–it’s that good, and I highly recommend you try it out. Here it is:

Ingredients you need:
- 1 cup wheat flour
- 1 egg
- 100 ml light beer (I recommend Corona for the full Mexican touch)
- salt
- pepper
Instructions:
Using a medium size bowl, add all the ingredients mentioned above. Mix the ingredients together really well, checking to make sure there are no chunks of flour left in the bowl, and making sure the batter isn’t to thin or too thick after you’ve mixed it: it’s best if it’s somewhere in the middle, so if it turns out a little to think, then add some more flour to it and mix; or if too thick, then add a little more beer and mix. Do your best to get the mixture right on the first time because if you have to correct by adding some more beer or flour, and you do it too much, you’re going to throw the proportions of the ingredients out of whack–you’d have to add more egg to maintain the same ingredient ratio and, thus, the same taste, and you don’t want to mess up this recipe because when you get it right, it is amazing!
To use this batter, you’re simply going to take your shrimp you have for whatever shrimp taco recipes you’ll be using, and one at a time dip it into this batter so it’s completely covered, and then deep fry your shrimp one at a time. This batter will cook with the shrimp and caramelize around it, leaving you with shrimp to use in your tacos that taste world-class.
I mentioned before that this is the batter that’s use for Baja shrimp taco recipes, but it works great with shrimp for almost any type of shrimp taco recipe. I think you’re going to love this batter, as it tastes incredible, and if you do, you might consider trying your hand at cooking some other authentic Mexican recipes on another occasion. Provecho!
