Cupcakes are now really popular. They are used for many occassions, not just purchased out for a child’s birthday party. You can get them at most cafes; there are also a lot of shops that sell nothing other than cupcakes.
Small individual cakes starting to become well-liked at weddings, where each guest has one. They’re extraordinarily quick and simple to make and preparation time is around ten minutes. This recipe will make around 20 cupcakes. To keep things easy it is best to utilize a cup measure. The cup should hold roughly 250 ml/8fl oz of fluid.
Ingredients
125 g/4 1/2 oz butter (or usual spread)
Half cup Castor Sugar (or other white sugar)
1 teaspoon Vanilla Extract
2 Eggs
1 1/2 cups self-raising flour
Roughly 1/3 cup of milk
2 cake baking trays
Cake paper cases – about 20
Method.
1. Assemble the mixer.
2. Mix together the butter, sugar and vanilla extract until creamy smooth.
3. Add the 2 eggs and mix again.
4. Add the flour and mix some more.
5. Gradually add the milk and mix for the final time. Don’t make the mix too runny (see the handy hints below).
6. Put the paper cases in the baking trays and fill each and every one with a good heaped cereal spoon of the mix.
7. Cook in a pre heated moderate range for 10-15 minutes (keep an eye fixed on them because they cook quickly).
8. Once the cupcakes have risen and look golden brown they are cooked. Remove from tray and place each one on a wire rack to cool completely.
Handy Hints and Suggestions.
The consistency is about right when the mix slowly falls off the spoon. If it just stays there it’s likely a bit thick, so add some more milk. If it runs off it’s definitely too thin, so add a bit moreflour.
Make sure you allow the cupcakes to cool down fully prior to decorating, otherwise the topping, cream, or whatever you decide to use, will soften.
Once cool, cupcakes freeze well in a sealed container or freezer bag.
They are perfect for school lunch boxes.
If you need to make bigger cupcakes, use a muffin tray and muffin sized paper cases. They will take longer to cook of course.
Make smaller cupcakes by putting less mix in each paper case. Mini cupcakes are fun for children and a way for adults to indulge with less guilt. Keep a watch on them in the cooker as smaller ones will cook fast.
