The festive days of Diwali 2011 are quickly approaching and your Diwali calendar should now be bursting with things that must be done eg the greetings to send, dishes to prepare as well as other last-minute errands. The celebration of Diwali brings with it joy and absolute happiness for all as well as some wonderful culinary surprises. Here then are some straightforward and innovative sweet recipes that you might prepare at home in just about no time at all.

1. China Grass (agar-agar)Burfi(fudge)

China grass is a type of vegetable jello which is quick-setting. It does not have any taste or smell. It is available in the form of strands and powder. Here’s what you’ll have to prepare this yummy China Grass Burfi;

Ingredients:

Milk 1/2 litre

One packet of China grass strands (about) 8 grams.

Sugar 250 grams

1 cup water

Grated cashew, almonds, and pistachios for garnish.

Edible silver leaf for decoration

Method:

Cut the china grass strands into tiny pieces and soak in warmed water for five minutes to melt it.

Boil the milk in a pan.

Squeeze the china grass pieces to remove excess water and add the squeezed china grass to the boiling milk. Stir steadily.

Let it simmer just until the china grass then melts completely.

Add sugar and stir till the sugar melts.

Tip the stir into a greased pan or in moulds.

Garnish with dry fruits and sliver leaf.

Let it set at a comfortable temperature.

Cut into diamond shapes and serve.

2. KhoyaHearts and Stars

A toothsome heart and star-shaped candy to prepare for your special ones. Here then is what you’ll need;

Ingredients:

1/2 kilo of Laddoos(any type of your preference)

Khoya ormawa (400g)

Ground sugar 1 1/2 tablespoon (stay light on the sugar as the Laddoos are very sweet).

Sliced dry fruits

Cardamom powder 1/4 large spoon

Cashew nuts fifteen (15) nos.

Ghee two spoons

Method:

Grate the khoya and fry it in ghee on an exceedingly low heat for a couple of minutes.

Cool and then mix the sugar and dry fruits. Keep it aside.

Crumble the laddoos completely and divide the crumble into two (2) parts.

Spread a half on a greased pan and spread a layer of the prepared khoyaon the laddoos and then spread the remainder of the crumbled laddoos overt it.

Press the spread lightly and let it set at a comfortable temperature.

Cut in heart and star shapes and decorate with the use of cashew nuts.

These succulent heart and star shaped treats will make Diwali 2011 a wonderfully special one for your friends and with a little luck earn you a tonne of praise from buddies and relatives.
